The Neumann Kaffee Gruppe Partnership to Advance Coffee Equity (NKG PACE) is a green coffee training program offering members of the Black community — a group that experiences the largest gap in employment and decision-making roles in the U.S. coffee industry — opportunities to become green coffee quality specialists. It was created in close cooperation with the Coffee Coalition for Racial Equity (CCRE). NKG PACE is a paid, one-year program through which the Neumann Gruppe USA (NGUS) companies — Rothfos Corporation, InterAmerican Coffee and Atlas Coffee Importers — share their deep knowledge of the green-coffee industry, as well as the quality expertise of NKG sister companies in nearly every coffee-producing country. We are sooo excited for the next OAS ??, since this topic is possibly the most relevant for everyone who applies to NKG PACE. So many of us came to the coffee industry through cafes. ? These classic “third spaces” offer community, purpose, important professional and life skills, and a view into a rich, fascinating industry. But often, they don’t offer much room for the vertical growth that can be desired as we continue through life’s next stages. This conversation will consider the possibilities for leaving the barista bar but remaining in coffee. We'll discuss: ? Examples of coffee and coffee-adjacent industries ??Types of roles and lifestyles ? Potential next steps toward a career in coffee. Best of all, our special guests ?? will be: Michelle R. Johnson, CEO and co-founder of Ghost Town Oats. Michelle earned a global reputation in coffee through her site, The Chocolate Barista, and was the first Black woman to compete in the U.S. Barista Championship. Jasmine Murphy, assistant manager, Coffee Materials & Sustainability at The J.M. Smucker Co., has worked in coffee for 12 years and has been a Q Grader since 2017. Muna Mohammed, founder of Eight50 Coffee, has worked in Senior Branding and Marketing roles for the last 15 years, in industries including the public and private sectors, as well as with small business enterprises and entrepreneurs. Rachel Apple, a coffee consultant who helps companies build quality control systems, source green coffee and much more, has 18 years of experience in the specialty coffee industry. Her resume includes pivotal roles at Cometeer, George Howell Coffee and Cup of Excellence, where she serves as a Head Judge. She's also a certified SET Course Instructor. Ametide Aurelus is a supply chain professional with vast experience in logistics coordination and supply chain management. She holds a Bachelor of Science in Supply Chain Management and is pursuing a Master's in Supply Chain Analytics from Rutgers University. Christopher Brown is the Mid-Atlantic senior sales manager for Lavazza. Do you know what happens during coffee fermentation? ? It’s a crucial step in the post-harvest process of coffee cherries. During this stage, the mucilage layer, a sticky and sugary substance surrounding the coffee beans, goes through a remarkable transformation due to microbial breakdown, which greatly influences the final flavor profile of the coffee. Here are some key events that occur during fermentation: ?? Microbial population multiplies 100x within the mucilage. ?? Microorganisms consume 2/3 of mucilage simple sugars. ?? Lactic acid, acetic acid, and ethanol are produced. ?? pH level drops due to acid production. ??? Temperature of the coffee mass rises. ?? We recently had the distinct pleasure of taking the Coffee Quality Institute “Post-Harvest Processing” class with CQI Instructor Timothy Heinze 韩牧. “Distinct” because it’s hard to imagine anyone offering five hours of instruction with more cheer, intelligence or enthusiasm than Tim?– even as Hurricane Beryl barreled through his backyard! Tim, who’s based in Houston and has a Master of Agriculture from Texas A&M, spent 10 years in China, much of it working with coffee producers. “Improving quality, changing lives” is a motto of the CQI but it’s also an apt summary of the role of processing. Tim offered a detailed overview of the multiple processing methods, a science-based look at coffee fruit anatomy, and explanations of the history of these methods and their possible futures. In short: The lesson was comprehensive and a treat, and Tim was a joy. Our biggest thanks to the CQI team for extending this program to the NKG PACE Partners, for all the work they do to create equity in coffee, and for their valued partnership! . #nkgpace #coffeequality #coffeeeducation #equityincoffee
