As egg prices top $7, it’s time to innovate ?? Yesterday at Sprouts Farmers Market the shelves for eggs were empty, but a supply of Eat Just, Inc. eggs were at the ready. As reported by Bloomberg, national egg prices wholesale rose to $7.34 per dozen, up another 10% from last week. Due to bird flu avian influenza which has killed millions of birds, we’ve reached one of the biggest moments in foodtech history. Now the price advantage that eggs have always had is nearly gone. Eat Just, Inc. is about the same price, and other plant-based egg alternatives are preparing price reductions rapidly. But it isn’t just price, eggs just aren’t available as there are massive shortages across the US. Retailers are saying this is the new normal. Yo Egg CEO Eran Groner reported that restaurants are looking to alternatives as an insurance policy, their chickpea based sunny-side-up vegan eggs are $1.80 each. Hema Reddy of Crafty Counter just announced their “eggless salad” which they are debuting at #expowest next week. Innovation doesn’t always have price parity or shortages to help even the paying field. Is the egg crisis one of plant-based's most important moments ever? Eat Just, Inc. CEO Josh Tetrick thinks so. Sales of Just Egg – a vegan alternative made from mung beans –?rose five times faster last month than in 2024. “Egg shelves are empty, except for one product, and it happens to be made from plants,” Tetrick tells Green Queen Media. “It’s both an extraordinary and strange moment.” Across both retail and wholesale, eggs have never been more expensive in the US. Retailers and restaurants want to order more Just Egg since "consumers are going through the product faster, because there are fewer options – i.e. chicken eggs – available". Tetrick says the company – and the plant-based industry – must meet the moment and "prove that it’s up to the challenge".
