Jicama and Citrus Salad with Berry Vinaigrette 5 servings
2 cups jicama, sliced
1 cup cucumber, sliced
1 mandarin orange or small orange, peeled and segmented
1 handful baby spinach, watercress, or arugula
Dressing
1 Tablespoon honey
2 tablespoons apple cider vinegar
1 pinch cinnamon
? cup extra virgin olive oil
? cup fresh or frozen strawberries
walnuts, crushed, as desired
? teaspoon black seeds (nigella/ kolongi), optional
- DirectionsIn a bowl, add jicama, cucumber, orange, and greens; toss.
- In a blender add all dressing ingredients; do not add walnuts and black seeds. Blend well.
- Top with some of the dressing, walnuts, and black seeds.
Broccoli Salad with tofu mayo, and citrus dressing
5 servings
4 -5 cups fresh broccoli florets and stems, chopped in small pieces
? red onion, finely chopped
3 Tablespoons organic apple cider vinegar
1 teaspoon Himalayan pink salt
Dressing
2.5- 8 ounces organic sprouted grain tofu
? lemon, squeezed
1 ? Tablespoons mustard
1 teaspoon crushed black pepper
2 Tablespoons honey
Toppings
1 whole medium size mandarin orange or any other type, squeezed 1/3 cup unsalted roasted sunflower seeds
1/3 cup raisins, chopped (you can also use cranberries or currants)
1 Tablespoons black sesame seeds
- DirectionsIn a bowl mix broccoli, red onions, vinegar, and salt. Toss very well to combine.
- Using a blender, mix all dressing ingredients on smooth.
- Cut the orange in half crosswise to squeeze. Squeeze half of the orange over the salad. Peel both halves and cut (if needed) into small pieces. Set aside
- Add the blended dressing to the broccoli mixture and toss well.
- Add the orange pieces and all of the toppings and toss again.
- Refrigerate until ready to eat.
Eat cucumbers for silica to build collagen (helps joint inflammation), mangos that help the cells detect insulin and lower blood sugar (reverse diabetes), and bananas for tryptophan (helps depression), and plant chemicals that have been shown to help your organs metabolize sugar into energy and amino acids into balanced hormones.
Seeds, like sunflower seeds and chia seeds and beans like chick peas, and mung beans contain, plant chemicals and phytonutrients, omega 3 fats, calcium, iron, magnesium, phosphorus, zinc, and other minerals that will help electrical signaling to repair your cells after stress.
Spices like cumin are antiviral and anti cancerous to help combat inflammation, so your brain has the ability to REMEMBER TO EAT HEALTHIER FOODS, so that you lower risk for illness and disease. If you use lemony (coriander seed and cumin), bitter (nutmeg), and sweet (cinnamon) spices in cooking with beans you will find they taste better and like a domino affect, you will feel better. Make a curry with chickpeas instead of meat. You won’t miss the protein.
