Why is HACCP important?

To truly understand HACCP, you first need to grasp its significance. Food safety has come a long way, evolving from a system focused primarily on protecting large manufacturers from brand damage to a globally recognised framework driven by legislation, retailer requirements and consumer awareness.

Introduced by the WHO in the 1990s and later adopted by the EU law, HACCP remains the gold standard for food safety management, even as the UK has moved outside the EU. Manufacturers today must demonstrate their commitment to food safety daily, meeting audit demands and aligning with global strategies like the WHO’s Global Strategy for Food Safety 2022–2030, which aims to ensure safe food for everyone.

What is HACCP?

HACCP is a systematic approach to identifying, evaluating and controlling food safety hazards. Its goal is simple but critical: to ensure that consumers receive safe, contaminant-free products. In the UK, HACCP principles are mandatory across the entire supply chain, from farm to fork, to protect against illness and injury.

How do you implement HACCP?

Developing a HACCP plan starts with foundational tasks. These include forming a team, describing the product, creating and confirming a process flow diagram, and ensuring prerequisite programs (PRPs) like good manufacturing practices (GMPs) are in place. PRPs cover essential operations like supplier approvals, sanitation practices and staff training, providing the groundwork for an effective HACCP system.

After identifying hazards, it’s essential to assess their severity, likelihood and potential causes. Decision trees are a valuable tool to determine whether a hazard requires a CCP.
