WORLD FOOD DAY 2022: A STORY FROM BOLIVIA

On the occasion of the #WorldFoodDay, which will be held on October 16th, Consorzio Gourm.it wants to draw attention to the unfortunately ever-present issues of poverty, world hunger and food security.

With this purpose, we wish to report the experience of one of our members, Enrico Rosso of Caseificio Rosso.

Enrico has volunteered in numerous missions in Bolivia, where he first went in 2014 through the Operation Mato Grosso. The goal is to help local people, contribute to their economy, as well as give young people a chance to earn a dignified living.

In these operations, many development projects are organized in different areas: that of health, tourism and activities related to agriculture including potato growing, greenhouse work and cheese production.

Concerning this last aspect, Enrico also contributed by providing the Bolivian community of Pe?as with some basic equipment for the preparation and processing of cheese, such as cheese-moulds and thermometers. Thanks to these donations, Pe?as community was able to establish a small alpine dairy, where 2-3 wheels per day are produced using milk milked from local cows. Part of the cheese production is later sold in the capital city of La Paz. A small cheese maturing cellar, very similar to those typical of the Italian tradition, has also been built. Thanks to these initiatives, the local economy of Pe?as is growing.

Focus on: a woman from the community learned to reproduce Maccagno cheese using the original recipe from Caseificio Rosso and, as a result of Enrico's lessons, she also became the first female mountain guide in the area!?

This testimony proves that it is possible to work in order to provide nutritious food for all, and especially to facilitate access to food by enhancing the resources of the areas.
