Wishing for Spring Crab Napoléon

Ingredients:
Vinaigrette:
1 cup white balsamic vinegar
½ cup extra virgin olive oil (might be more)
1 teaspoon Dijon mustard
1 tablespoon shallots, minced
1 tablespoon Hudson Valley Wild Honey
Salt & Pepper to taste
Crab Stack:
1 cup Sliced Thin Roma tomatoes
1 cup thinly sliced English cucumber
1 cup small diced red onion
1 cup small diced mango
½ cup small dice pineapple
1 cup pea shoots
1 ½ cup fresh crab meat
6 - 1 ½” W by 3” H PVC piping (Home Depot)
Directions:
Make Vinaigrette ahead and place in fridge.
To assemble:
6 PVC placed on a sheet pan, tightly layering together in the PVC pea shoots, tomatoes, cucumbers, mango/pineapple mix, onions and crab
Press down on the top layer while slowly removing the mold to reveal the freestanding crab stack. Repeat with the remaining ingredients to form a total of four crab stacks.
Drizzle the crab stacks with the White Balsamic honey dressing and serve.
