- 6 ripe tomatoes, diced
- 1 large cucumber, peeled and diced
- 1 red bell pepper, seeded and diced
- 1 small potato
- 1 small red onion, finely chopped
- 2 cloves of garlic, minced
- 4 tablespoons of extra virgin olive oil, separated
- additional 1/4 cup extra virgin olive oil*chef tip, use an herb-infused olive oil
- 4 tablespoons of red wine vinegar, separated
- 1/2 teaspoon of cumin powder
- 1/2 teaspoon of smoked paprika
- Salt and pepper to taste
- 1/4 cup of fresh cilantro, chopped

- On a baking tray, toss 1/2 the garlic, onion, potato and red pepper with the 2 tablespoons of olive oil and salt. Roast in a 350 degree oven for 30 minutes.
- In a large bowl, combine the diced tomatoes, cucumber, and the other half of the garlic. Toss gently to mix the flavors.
- In a separate small bowl, whisk together 2 tablespoons extra virgin olive oil, 2 tablespoons red wine vinegar, cumin powder, smoked paprika, salt, and pepper. This vibrant dressing will bring all the ingredients to life.
