Debra's expertise lies in finding the perfect wine pairings for Jamaican dishes, whether it's curry goat, oxtail, or a traditional Jamaican patty. During a tasting experience with Debra, she encouraged us to raise our glasses and first take in the aroma of the wine. The smell of the wine can provide valuable insights into its flavors and characteristics. By understanding the aromas, we were better able to appreciate its compatibility with different dishes.

For example, if you're having jerk chicken, Debra suggests pairing it with a crisp white wine, such as a Pinot Grigio. The refreshing qualities of the wine help cleanse the palate and balance the spiciness of the chicken. If you prefer something sweeter, a medium sweet Riesling or Moscato can also complement the flavors of jerk chicken.
