King's day in the Netherlands is a very big and special birthday celebration; it is a day off and all forms of celebrations are present; Festivals and games for kids are installed in almost every city starting one week before the actual day, on the 27th of April, music bands are performing starting from the night before, and open markets are where people can sell their new and used goods.
I usually walk around the city and enjoy the vibes of everyone happily getting together, but I also felt like I want to try something new.
My Tunisian friends and I always debate on whether Tunisian food can be present and known in the Dutch food market, we believe our cuisine is so rich and worth being known to the Dutch community, to our friends and network in the Netherlands, our second home. But we don’t see much Tunisian restaurants.
I met some friends on the 26th of April and one of them is Indian, she told me she is preparing Indian food to sell it tomorrow with another friend of ours and I started bombarding her with questions... how? where? ... and some ideas started to pop up in my mind... and then I asked: do you need a permission? the answer was NO!
I went home and on my way I called my friends one at a time saying: Lets sell Fricassé tomorrow!
Fricassé is a small sandwich with fried dough, filled with little bit of harissa, smashed potatoes, parsley, tuna and egg.
To be honest I was expecting a rejection but they were exited and willing to do this experience last minute, we are also confident because we have a very good chef.

To make the story short, the reason I am sharing this here is that getting out of our comfort zone and trying something new is very important and necessary for our minds and souls, we get so comfortable in our daily and usual set up that we limit our abilities and reduce opportunities for growth and fulfilment.
We are all highly skilled engineers working in well known tech companies, doing a small task like selling food that we make ourselves seems non relevant to our job, but its impact on our personality and the way we perceive ourselves and others is big.
If you want to know what happened on the day... unexpected things happened.. but we still managed to sell almost half the quantity and most importantly we had the opportunity to talk to every person and ask feedback about the food and Tunisian cuisine.
Many encouraged us to open a Tunisian restaurant, do you think we should give it a try?
