“Holly is really creative, and she takes a lot of ownership of what she does,” he explained. “In a newer franchise, she will have a little bit more leeway in that regard. As a newer organization, they’re still developing and testing a lot of things out, but at the same time, they have a lot of experience in business. Jonathan Ellis comes from the McDonald’s world, so he understands where processes need to be implemented and how to standardize them.”

Ellis has also played a crucial role in the development of the franchise system by making himself and his expertise available to franchisees. He has been so involved, in fact, that Ambriz said he was pleasantly surprised by how invested Ellis has been in their success. Rather than meeting the founders once and only speaking with support and administrative staff for each following interaction, Ambriz said that Ellis has been directly involved in the development of the new El Paso location.?

“Obviously, there are certain restrictions to what Jonathan can and can’t do because he’s the franchisor; he can’t make certain decisions for us. But there are a lot of things he’s helping us with that we wouldn’t have even thought of, and that has been great,” said Ambriz. “It’s really nice to have that stability and structure that I was looking for but still have the flexibility that Holly wanted.”
