Rapeseed oil is an edible oil extracted from rapeseed, and it is one of the important edible oils.
The equipment and processes for pressing rapeseed oil are different in the pressing workshops of each region. Some of the pressing workshops are cold-press and some are hot-press. Here we?talk about the difference between the two processes.
- During the pressing process, for the hot-pressed?rapeseed oil, rapeseed?should be roasted?at a high temperature, and the rapeseed should be roasted?to about 130 degrees in a roaster.
- The oil press also needs to be preheated to about 80 degrees in advance.
- Hot pressed oil only needs to be pressed once, and the processing efficiency is high.
- The unique fragrance in the rapeseed is fully released, which belongs to the strong-flavored rapeseed oil, but the roasting?temperature is high, the slag in the extracted rapeseed crude oil is small and difficult to filter clean, and the high temperature makes the phospholipids in the rapeseed release to the?rapeseed oil, it is necessary to add salt water for simple dephosphorization. After adding salt water, the water content of rapeseed oil increases, which shortens its shelf life of rapeseed oil.
- The pressed rapeseed oil has a strong aroma and a special aroma of rapeseed oil, which cannot be replaced by other vegetable oils. The color is brownish yellow.
- But the disadvantage is that if it is not processed properly, it will cause the oil to foam, with a small amount of sediment, low smoke point, and large oil smoke when eating.
- Cold-pressed oil is the rapeseed that is pressed without roasting or slightly heated.
- It needs to be pressed 2-3 times to get the oil squeezed clean.
- The pressed crude oil needs to be heated to about 100 degrees for dehydration treatment and then filtered.
- Because the slag in the cold-pressed crude oil is relatively large, it is easy to filter clean, the color of the filtered cold-pressed oil is cool, and yellow, with few impurities, no foam when eating, and less oily smoke. Cold-pressed rapeseed oil can do zero addition, not even salt.
- From the perspective of healthy nutrition, cold-pressed oil is pressed at a low temperature, and the nutrients are not destroyed, which has a certain advantage in this regard.
- The disadvantage is that it does not have the special aroma of rapeseed oil, like the salad oil sold in the supermarket.
