Stevia, also known as stevia or stevioside, is a glycoside extracted from the leaves of the Asteraceae plant Stevia rebaudiana. This natural sweetener has the characteristics of high sweetness and low calorie. Its sweetness can reach 200 to 300 times that of sucrose, while its caloric value is only 1/300 of sucrose.

The classification of stevia sugars is mainly based on differences in their composition and quality. It contains a variety of components, among which RA (Rebaudioside A, A3) is the best sweetening component in stevia. The higher the RA content, the better the quality of the stevia sugar is generally considered. Based on the RA content, stevia sugar can be divided into two types: ordinary type and high-quality type. High-quality stevia sugars, such as those with an RA content of more than 90%, have higher sweetness and better quality. However, due to technical reasons, it is very difficult to produce varieties with RA content reaching higher standards such as 93%, 95%, and 98%, so they are relatively rare in the market.

In addition, stevia sugar can also be processed and refined differently according to application requirements to obtain products of different types and specifications to meet the diverse needs of food, beverages, pharmaceuticals and other industrial fields.
