What's Cooking at ST (and at my house) -- December 1, 2023

I know it will be hard to believe, but at a Thanksgiving feast where I'd prepared a Dry-Brined Turkey with Tangy Honey Glaze, Sausage and Herb Stuffing, Ultra-Creamy Mashed Potatoes with Fried Potato Skins and Shallots, Sweet Potato Casserole with Frosted Flakes, Creamed Onions Alla Vodka, Glazed Carrots, Roasted Cauliflower Salad with Arugula and Pear, and Cranberry Sauce with Dried Cherries and Cloves, my favorite dish was the Green Beans.?

Almost everything, in fact, was delicious. The one rather significant exception: This year the turkey was a turkey. But the stuffing was so good, we used the leftovers to make stuffing waffles, which would have been spectacular in an open-faced sandwich with the cranberry sauce, gravy, and a better prepared turkey. We also used the leftover ultra-creamy mashed potatoes to make croquettes, which were also delicious.

In fact, the Thanksgiving weekend was a carb-bomb that I may never recover from.?

Serves 6??Time: 50 minutes

Ingredients

  • 3 tablespoons vegetable oil
  • 2 pounds fresh green beans, trimmed
  • 1 teaspoon kosher salt, plus more to taste
  • 1 (3-inch) piece fresh ginger, peeled and finely chopped (about 2 tablespoons)
  • 1 Fresno chili or jalape?o chili, seeded and finely chopped
  • 3 garlic cloves, finely chopped
  • 2 teaspoons sherry vinegar
  • 2 teaspoons fish sauce
  • 1/2 cup loosely packed fresh mint leaves, torn
  • 2 tablespoons chopped salted roasted peanuts or toasted sesame seeds (optional)

Preparation

  • Preheat oven to 400°F. Heat oil in a large (14-inch) cast-iron skillet over medium-high until almost smoking. Add green beans, and sprinkle with salt. Cook, flipping beans every 2 minutes using tongs, until beginning to char in spots, about 10 minutes.
  • Transfer skillet to preheated oven; roast, flipping beans every 10 minutes, until wilted, lightly charred, and tender, 30 to 40 minutes. Remove skillet from oven.
  • Stir in ginger, chili, and garlic; let residual heat from the skillet lightly cook the aromatics 1 minute, stirring occasionally. Stir in vinegar and fish sauce; season with additional salt to taste. Fold in torn mint. Top with peanuts or sesame seeds, if using.
