December 9, 1886: Clarence Birdseye, American inventor of deep freeze food processing & General Foods Corporation co-founder was born. During Arctic trips, he noticed that freshly caught fish, when placed onto Arctic ice & exposed to icy wind and frigid temperatures, froze solid almost immediately. He discovered that the fish, when thawed & eaten, still had all its fresh characteristics. He concluded that quickly freezing certain items kept large crystals from forming, preventing damage to their cellular structure.
