Some negative effects to coffee beans are air, moisture, heat, and light.  

Oxygen leads to oxidation, where beans lose aroma and essential oils. Heat and moisture accelerate the process as light does but to a lesser degree.  So if you want your coffee beans to stay fresh, you need to avoid the four above mentioned things.

It is important to keep your coffee beans in a dark and cool location.  Avoid places where there is warmth such as a cabinet near the oven, spot on the kitchen counter, close to windows, etc.

Where the beans are stored and what they are stored is very important, so you should think carefully when buying containers. You need to look for specific characteristics when you are making a choice for a container. Coffee's retail packaging is generally perfect for long-term storage, so it is better to invest in storage canisters with an airtight seal.

  1. It should be made of non-reactive material, not to impart any unwanted flavours to the coffee. Ceramic, glass, or non-reactive metals are best.
  2. The container you choose should be airtight. Air is one of the biggest enemies to coffee beans.
  3. It is essential to find an opaque container to ensure that the beans are protected from light.

Is it good to freeze the beans?

There is always debate on this topic, whether or not to freeze coffee beans. The main challenge is that coffee absorbs moisture – and odours, and tastes – from the air around it, so the simple answer is that you shouldn't. Think of bread or fish. Therefore it is generally advisable to avoid freezing your coffee beans. Still, it is also vital to avoid putting them in the fridge. They will become exposed to more condensation and moisture, and this will be the fastest way to spoil them.
