What Are Antinutrients ?

Antinutrients are appropriately named, as they oppose the action of vitamins and minerals in our food by blocking our body’s ability to absorb and use them properly. Not only that, they are also the underlying cause of many gut issues like leaky gut syndrome and irritable bowel syndrome (IBS). Commonly found antinutrients are Phytates, Oxalates and Lectins

Upto 50% of lectins can be reduced by soaking.

Seeds / Nuts / Beans /Legumes and Some Grains can be placed in glass jar or sprouting vessel away from direct sunlight for about 8-12 hours until you see sprouts appearing. Upto 81% of phytates can be reduced by sprouting.

Beans / Legumes / Seeds can be soaked and fermented.  

Upto 88 % of oxalates are reduced by fermenting.

The high temperatures are effective for destroying antinutrients like lectins and oxalates.


A combination of these methods will be most effective for reducing the antinutrients, sometimes even completely and making nutrients more #Bioavailable
