Adanech Asghedom, owner of Ada’s Gojjo, will open a second restaurant in Asbury Park in 2025. The new restaurant will focus exclusively on vegan Ethiopian cuisine. Asghedom’s current restaurant combines Ethiopian and Dominican dishes and features popular vegan options like turmeric-spiced yellow peas, vegetable stews, and injera, a traditional Ethiopian flatbread.
