Welcome, Gary! Our New Assistant Food and Beverage Manager

We're thrilled to announce the arrival of Gary Butterfield as our new Assistant Food and Beverage Manager!

Gary brings a wealth of experience and passion for hospitality to the Great National South Court Hotel. His journey began at the esteemed Dromoland Castle Hotel & Country Estate , where he honed his skills, starting as a commis waiter and eventually becoming a sommelier. During his impressive three years at Dromoland, Gary further solidified his commitment to excellence by earning his WSET certification.

Continuing his impressive trajectory, Gary then served as Head Sommelier at No. 1 Pery Square for a successful four years. He then took a significant step forward, becoming Restaurant Manager at the East Room. Here, his exceptional leadership and management skills truly came to the fore.

Gary's extensive experience, combined with his genuine passion for the industry, makes him an invaluable asset to our team. His dedication to professional growth is further evidenced by his ongoing pursuit of certifications with both the Wine & Spirit Education Trust (WSET) and the Court of Master Sommeliers (CMS).

We recently spoke with Gary about his first week with us, and his enthusiasm was palpable.

I'm eager to contribute my experience and learn from the many talented hospitality professionals here.
