This week is World Breastfeeding Week. Tomorrow on the Water In Food Podcast, Zachary Cartwright, PhD features a new innovative and "game-changing" product for nursing moms called Milkify .

Founded by Berkley Luck, Ph.D. in 2019, Milkify allows new moms to freeze-dry their own breastmilk for extended storage and enhanced convenience.

"So the breast milk powder can be stored for years without refrigeration," says Dr. Luck. "It can be used by mixing with warm water, just like you would use powdered formula. And this technique of preserving breast milk is being used by milk banks and hospitals around the world, but we're the first to make it available directly to consumers."

As a powder that is returned to moms, Milkify needed to solve some water activity and food science hurdles for shelf stability and safety.

"Since we operate in a closed-loop system, we don't pasteurize," Dr. Luck says. "Microbial growth is a particular concern for us. We wanna be sure that whatever we are processing and packaging is gonna stay safe."
