Holiday gift guides are here ? but I'm going to use this moment to shine some light on a founder I deeply respect. I'm calling out Vafels' mention in 5280 Magazine (TY Courtney Holden!) not just to tout their inclusion in this round-up, but to remind people how a small decision to support growing entrepreneurs and start-ups this time of year can move the needle significantly for their ability to grow and scale. Vafels came on as a client with Hi-Lo Agency earlier in the year and if there's one thing that stood out to me most about this (truly delicious) European-style, plant-based waffle brand, it was the founder, William Dugan's, story. Will is a former pro-cyclist who moved to Boulder and started charity-based cycling rides for athletes called Supertraining. These rides, which still go on today, enable athletes who train in Boulder (hello elevation!) to spend a day riding together while benefitting a different charity each month. To encourage more riders to show up, Will started providing handmade vegan-based versions of Liège wafels - a "power" pastry he grew to love while racing across Europe. You see where his goes ... Over five years later, his Liège Vafels are a "cult-favorite" around Boulder (and beyond!) alongside his Stroopvafels - also a vegan spin on the beloved Dutch stroopwafel. These pastries were built around empowering athletes to giveback, but in essence, these pastries are giving US back plant-based and whole ingredient energy ... something we should all make a more conscious choice to consume.
