Veggie Sandwich

Ramadan Mubarak!


During this so-called pandemic I noticed the meat section in supermarkets are mainly low supply. I personally stopped eating meat in the late 80s, except for some fish once in a while. I feel a lot better.


There are plenty of healthy meat alternatives dishes that can be composed of ingredients like cabbage and navy beans that are excellent nutritional content while giving the biggest bang for your buck nutrition wise.

Here’s a delicious Veggie Sandwich I just made for breaking my Ramadan Fast!



INGREDIENTS (Makes one sandwich)


2 tablespoons Coconut oil


SAUTé MIX

1 cup shredded Cabbage

1/4 Shredded Onion

1 Clove of garlic chopped

1 tablespoon carrots chopped

1/2 tsp Jalapeno Pepper (minced)

3 thin slices squash 


SEASONING MIX

Pink salt to taste

1/8 tsp Freshly ground black pepper

Dash Cayenne Pepper

Dash ground sage

1/8 test turmeric powder

1/8 tsp Hungarian paprika

1/8 tsp thyme

1/8 tsp rosemary


1 Tbsp Barbecue Sauce (Optional) 


WRAP OR BREAD

2 thick slices Rye or Whole Wheat Bread

2 whole leafs Green Lettuce (dark)

3 slices tomato



Step 1: Sauté: Heat oil in a skillet over a medium flame, sauté cabbage, onion, garlic, carrot, pepper and (seasoning mix) for 4 minutes; add squash and continue to sauté 4 minutes or until golden browned and vegetables remain crisp. 


Step 2: Make a sandwich with roasted vegetables on one slice and Lettuce/tomatoes on the other. Serve with favorite sandwich sauce like barbecue sauce.
