We’re at the end of what has been a particularly turbulent year. But with the world opening up again, there is some semblance of normalcy, with a sprinkling of caution of course. And this calls for some celebration. What better way to ring in the New Year than tuck into a rich and guilt-free vegan cake. What’s more, this recipe uses not one but three different types of vegan milk from Only Earth! Presenting the Vegan Tres Leches Cake?
The Recipe
What you will need:
An 8 inch square baking pan
1 cup oat milk
1 cup coconut milk
2/3 cup almond milk
1 tablespoon lemon juice
? cup sugar
1/3 cup canola oil
2 teaspoons vanilla extract
? teaspoon orange extract
1 ? cup all-purpose flour
3 tablespoon cornstarch
1 teaspoon baking powder
? teaspoon salt
? teaspoon baking soda
1/3 cup granulated sugar
1/3 cup brown sugar
A pinch of cinnamon
Topping:
1 cup coconut whipping cream
2 tablespoons powdered sugar
? teaspoon vanilla extract
Fresh seasonal fruits like chunks of strawberries, mangoes or pineapples
Method:
Preheat the oven at 350 degrees Fahrenheit and grease a square pan. Mix oat milk and lemon juice in a bowl and wait for it to curdle, after which you add in oil, vanilla and orange extract and whisk till the mixture is smooth. Next up, sift flour, baking soda, salt, baking powder and cornstarch and give it a gentle mix without over stirring. Pour this batter into the pan and let it bake for 30 minutes or so.
In the meantime, make the soaking syrup. For this, mix the almond milk, coconut milk, granulated and brown sugar and cinnamon and heat it in a saucepan while stirring constantly. Lower the heat and let it simmer for around 20 minutes until the syrup thickens and let it cool for 10 minutes.
When the cake is ready, drizzle the syrup over it while it’s still warm, then wrap the cake in plastic and refrigerate overnight or for four hours.
To make the topping, whip the ingredients listed under topping using a hand-held mixer for about five minutes until you get soft peaks. Add the vanilla extract and give it another mix. Assemble the cake by spreading this topping on the chilled cake, and adding fruits on top.
