As a mom and entrepreneur, I've always been passionate about creating innovative, healthy foods. I remember experimenting (or "geeking out", as my son would say) in my kitchen with different proteins to create thinkThin, and during COVID, my son noticed I was back at it - this time, exploring whey protein produced with precision fermentation.


Why the fascination with this technology? Our food system faces significant challenges, including climate change, pollution, and animal welfare concerns. We need solutions that are both sustainable and ethical. That's where precision fermentation comes in.


My journey started with the intention to create a cow-free whey protein candy bar. But instead, I saw the opportunity to innovate the world's first milk made with precision fermentation. This incredible technology uses yeast and other microbes to produce ingredients, like milk proteins and fats, without the need for animals.


This revolutionary process has numerous benefits:

  • Reduced resource consumption
  • Minimized chemical inputs
  • Less waste and pollution
  • Enhanced food security
  • Maintaining taste and natural properties


Investments in the precision fermentation industry are skyrocketing, with nearly a billion dollars invested in 2022 alone. Major food companies like Tyson Foods, Inc., Kraft Heinz, Co., and Nestle are all taking notice and investing in startups within this space.


However, we must educate consumers to overcome the challenges posed by this novel technology. Explaining the process behind precision fermentation and its connection to familiar fermented foods and products (think cheeses and even insulin medication) can help foster a positive perception and increase purchase intent.


The future of precision fermentation is bright. It's projected that by 2050, 20% of per-capita beef consumption will be replaced by precision-fermented proteins, reducing deforestation and related emissions by 50%. As consumer demand for sustainable and ethical foods grows, precision fermentation offers the food industry an opportunity to transform and focus on a sustainable future.


So, from one mom "geeking out" in the kitchen to a global movement, I'm excited to see where this revolutionary technology takes us. Together, let's embrace precision fermentation as we work towards a better future for our planet and our plates.
