Day three delved into the heart of the matter: how can we transform diets to be kinder to the planet, while ensuring nobody goes hungry? The conversation shifted to behavior - the invisible force that shapes our food choices.
In a spirited breakout session that followed my talk on endogenous knowledge, the question was simple but profound: What are the top behavioral interventions to nudge us toward climate-friendly eating? The discussions swirled around strategies that target specific groups at the right moments, and honed in on identifying the optimal targets and timing. The consensus pointed to key life stages: youth, transitions like becoming a parent, and even the carnivorous top consumers. These pivotal times are windows for embracing new eating habits.
Further discussions emphasized the fascinating interplay of systemic and individual interventions, shedding light on the powerful role of retailers and? restaurants in shaping our dietary choices. It’s amazing to realize how our local food establishments can truly be agents of change.

Equally interesting was the focus on "environmental identity" – a concept intertwining our environmental beliefs and values with our choices, which appears to have untapped potential for causing lasting changes in our behavior, but hasn't been fully explored yet.
Then, tactics took center stage.
The battle between roadblocks and helping hands became clear. Roadblocks included regulations and taxes, steering food production and consumption. On the flip side, imaginative visuals on labels (vital for diverse literacy levels) and subsidies for sustainable food sources were hailed as catalysts for change.
As the day closed, questions danced in my mind, echoed by fellow participants. How do food preferences shift as we age? What truly crafts our "environmental identity"? And who are the future heavy eaters, guiding us towards a green horizon?
The journey is still unfolding, but one thing's for certain: the menu for change is being meticulously curated. From targeting pivotal moments to embracing economic incentives, we're crafting a recipe for a brighter, greener future.?
