The best way to work out if your new employee is a cultural fit is during the interviews.
If you will be working closely with them, make sure to ask yourself these questions:
Make sure that during their first few weeks of employment, they are working in a timely fashion and getting stuck in to the tasks they have to do.
Answer all their questions helpfully, and see how well they take the new information in.
They may need time to work everything out, so make sure to not rush them into tasks that could be too challenging at the start.

See how they interact with the other team members in the company, and make sure they feel settled and comfortable in their new role and team.
After this time period, if they are not picking up the work, acting out with other team members, and their previous experience is not matching up to their current performance, then your hire may not be 100% right.
