This is my 3rd article about Timur Nepalese Sichuan Pepper.

Timur, also known as Nepali pepper, is a popular spice in Nepal, and it adds a unique and fragrant flavor to dishes. Here are some interesting ways to use Timur in your kitchen, focusing on its application in Nepali cuisine:

Timur Tomato Chutney:

  • Ingredients:
  • 1 tomato
  • 1 red onion
  • 5 – 6 chillies (adjust according to taste)
  • 2 cloves garlic1 inch ginger1 teaspoon garam masala1 teaspoon Timur (Nepali Pepper)
  • Instructions:
  • Roast the tomato over a open flame until thoroughly cooked, then peel and set aside.
  • Grind ginger and garlic to a fine paste using a mortar and pestle.
  • Dice and grind the onion along with ginger and garlic paste.Roast chillies and mash them coarsely in the mortar.
  • Add Timur and grind finely.
  • Grind the tomato with the rest of the ingredients into a fine paste.
  • Mix in Jeera Powder and salt.Your Timur Tomato Chutney is ready!

Timur Chicken Curry:

Ingredients:

2 tablespoons oil

2 onions finely chopped

2 tablespoons ginger-garlic paste

1 teaspoon Timur (Nepali pepper)

? teaspoon turmeric

1 large tomato diced

? teaspoon black pepper? kg chicken

Salt to taste

  • Instructions:
  • Heat oil in a wok and fry onions until golden brown.
  • Add tomatoes and fry until oil separates.
  • Add ginger-garlic paste and fry until the raw smell dissipates.
  • Incorporate Timur.
  • Add chicken pieces and fry on low flame with the lid on.
  • Pour in a cup of water and let the chicken cook for about 20 minutes.Check if the chicken is thoroughly cooked, reduce the juices, and sprinkle black pepper on top.Your Timur Chicken Curry is ready to be served!

Spicy Timur Sauce:

  • Ingredients:
  • A handful of dried red chillies
  • 1 teaspoon finely chopped garlic
  • 1 teaspoon finely chopped ginger
  • 1 onion chopped
  • 2 tablespoons oil
  • 1/4th teaspoon vinegar
  • ? teaspoon Timur (Nepali pepper)
  • ? teaspoon sugar
  • Salt to tasteInstructions:
  • Soak red chillies in warm water for 30 minutes, then blend into a fine paste.
  • Heat oil in a pan, fry chopped onions until translucent.
  • Add chopped ginger and garlic, Timur.
  • Stir in the red chilli paste, vinegar, and salt.
  • Saute the paste for 2-3 minutes on medium flame.
  • Your Spicy Timur Sauce is ready! Blend for a smoother consistency if desired.
