Tidal Wave of Poke Washes over USA and We're Helping Drive it Home

There are almost 2,000 poke shops in the Los Angeles area, and it’s no question that poke has infiltrated the food world. But how did this Hawaiian dish become so huge in the restaurant industry? Well, it seems to be due to the combination of presentation (especially in the Instagram generation), ease, and flavor.

The dish was introduced to the West Coast when the first Sweetfin Poke restaurant opened in Los Angeles in 2015; and to the East when chef Bruce Bromberg started Blue Ribbon Sushi Bar in New York. Since then, poke shop after poke shop have opened up, lining the streets of L.A., N.Y.C. and other cities.

Poke’s healthier twist of fast food, and the DIY-like nature of the dish have allowed it to burst into the food scene and become massively popular among consumers. Its tastiness and trendiness have been shown to the rest of the world, and seem to be here to stay.
