Red Curry is quickly moving into the mainstream of north American menus. Do not be surprised if you find variations in flavor and color. When it comes to curry pastes you will find multiple flavor profiles. I believe that it is for this reason that it has become so popular. The only constant you will find in Thai curry dishes will be coconut milk, it is absolutely essential!
Fresh ingredients are also key to creating an amazing dish. It is so simple to prepare and isn't very time consuming if you are on the run (like most of us). Red curry is a great "speed scratch" menu item.
