Alcoholic beverages have been produced and consumed by humans since the Neolithic Era, dating as far back as 8,000 BC. The Alcoholic beverages industry is one of the fastest growing and evergreen industry which has never seen downfall and still most in demand. ?These beverages are brewed by fermentation of grains, fruits, or other sources of sugar. Chemical Analysis of the alcoholic beverages provides a fundamental basis for safety and quality of the product.

In India, the FSSAI (Food Safety and Standards Authority of India) has stipulated the quality specification of alcoholic beverages under Food Safety and Standards (Alcoholic Beverages) Regulations, 2018. The critical parameters are as follows:

·??????Total acidity (as tartaric acid)/volatile acidity (as acetic acid) ?

·??????Esters as ethyl acetate

·??????Higher alcohols

·??????Aldehyde as acetaldehyde

·??????Hydrocyanic acid

·??????Metal ions (Arsenic, Cadmium, Copper, Arsenic, Mercury, Calcium, Lead, Magnesium, Methyl mercury and Tin )
