Taste What You’re Missing: Surprising Stories and Science About Why Food Tastes Good

Did you know that adding salt to grapefruit makes it taste sweeter?

Taste, it turns out, is just the tip of the iceberg. As I learned from Mattson: Innovation for the Food & Beverage Industry 's Barb Stuckey , only a small portion of what we experience as flavor happens on the tongue. Most people wildly underestimate how their other senses influence what they eat. Some of Barb’s wonderful examples:

Sound

  • If a wine store plays French music, people buy more French wine, ditto for German or Spanish music and wine.
  • If a restaurant plays fast music, people will eat (and drink) faster
  • As noise levels increase, people experience foods as less salty and less sweet, so flavors have to be amped up.

Sight

  • If people are given an orange-colored glass of apple juice, they’re likely to believe they are tasting orange juice.
  • Similarly, if people are given a glass of clear but flavored liquid, they’re unlikely to recognize it as cola even if it’s the cola they drink daily.

Touch

  • Most people wildly underappreciate how much their sense of touch influences what they eat.
  • Without the textural clues that are normally present, many have trouble identifying familiar, everyday foods such as beef, pear, and broccoli.

Only a small portion of what people experience as flavor happens on the tongue!
