Pomelo gazpacho, cured egg, garlic foam

Sweet potatoes foam on poached sea urchin, squids ink powder, sturgeon egg

Glazer FERA fish, Snow peas falafel, celeriac, Sauce  Meniere

Earl grey,honey ,mint soufflé , dry fig ice cream
