I am sad to announce the recent passing of the driving force behind TAP’s meal preparation program. Ms. Nelly B. passed away at the age of 91 after a lifelong struggle with Type I diabetes or insulin-dependent?syndrome. This form is genetically inherited not necessarily diet/ nutrition-related per say, but rather sugar intolerance and insulin deficiency. Ms. Nelly was in exceptional health for her age, but the disease had damaged her heart over the years and she succumbed to diabetes-related medical complications. This is sad news for TAP and its representatives. Yet we will carry on with TAP’s business social agenda in her absence. Ms. Nelly leaves behind (4) children and several grandchildren, and she will be greatly missed!
In more positive related news… after experiencing the privilege of assisting Ms. Nelly in TAP’s test kitchen and recipe development labs, cooking alongside her as an apprentice, I became more adept at cooking for catering purposes or for groups. Thanks to her! I had previously cultivated a penchant for all things culinary while married. Although, whether or not my food tasted good is subjective! My husband never complained so I suppose that’s a positive sign. Additionally, Ms. Nelly gave her nod of approval after a long cooking lab in which we tag-teamed before she died. She also looked over a cookbook of North American-Euro Classic Recipes I have been compiling and editing since 2015 and she loved it; not just liked it! So I will be carrying on the meal preparation program torch. I was supposed to do this [eventually] anyway so Ms. Nelly could stay off her feet; but I hoped I would have a little more time before the transition. The Chairman and I had been co-planning this facet of my responsibilities. Mainly, to ensure that my professional and personal life remain in complete harmony and I continue to enjoy working; not allowing myself to be spread too thinly! Business owners and/ or the self-employed work every day at irregular intervals, on seven days of the week. Yes, I am guilty of working on the Sabbath. Ms. Nelly had informally given TAP permission to use her first name for its in-house brand. TAP’s meals are Old English-Style classics from a bygone era and the name is English in origin. It is perfectly consistent with TAP's brand. So her surviving relatives will not feel they are being taken advantage of or any legal infringement is being perpetuated. Further, to avoid any future legal issues, all recipes that originally belonged solely to Ms. Nelly have been modified and adapted to the dietary needs of TAP’s constituents: The malnourished and food-insecurity survivors, the homeless, chronically unemployed or lack of income, and those socially displaced between the ages of 21 and 35 who desire to work and make regular attempts at gainful employment to earn legitimate incomes. Additionally, per a 2022 addendum sent to those on TAP’s distribution list from The Chairman, TAP extended its benevolence budget to include the elderly or aging ages 65 and up; and differently-abled individuals of all ages living in the Dallas, TX region. TAP does not discriminate against all those eligible to receive its services based on race or racial grouping, ethnicity, religion, or cultural practices.

Kosher foods?are foods that conform to Jewish?dietary regulations with regard to hygienic food preparation of meat, dairy, and sea foods. TAP adheres to all kosher food preparation hygiene and cleanliness techniques, and all other methods of protecting against cross-contamination, food-borne illnesses, and/ or the spread of contaminates. This includes frequent hand washing, hair nets, sanitizing all cooking and serving utensils and work surfaces, and disinfecting cooking appliances and apparatuses to State satisfaction level. All TAP food handlers are experienced and/ or certified to handle low-volume consumable goods prepared in home-based or non-industrialized kitchens; which have different State procedures from high-volume catering operations. TAP prefers to keep all of its community engagement and food production functions on a smaller family-based level. One that is personable and makes participants feel as if they are cared for by a grandmother like Ms. Nelly. TAP will be performing a series of marketing test-drops to individuals who fit its demographic with surveys included in each CARE package; by which recipients can call or email their survey feedback responses. TAP wants to know how it is doing and we will not know unless the people tell us all the things they like/ dislike about the food! We hope they do so we can continue to provide quality food and social services! ?
