Sweet Potato Waffles ??

One of the best things about waffles is that you can eat them any time of the day! There are sooo many delicious recipes available for waffles but majority of those recipes contain some pretty unhealthy ingredients. Skip the empty calories with my simple 4 ingredient recipe.
Ingredients
1 sweet potato
1 egg
3 egg whites
1 tbsp cinnamon
1/2 teaspoon ginger (*optional)
*Dont be afraid to throw in some protein for flavoring but don’t over do it, this recipe already has roughly 14g of protein already.
Directions
1. Start off by mashing a sweet potato into a bowl.
2. Add egg, egg whites and dry ingredients to the bowl. Mix with a fork.
3. Spray your waffle iron with coconut oil and set to medium heat ( if you don’t have coconut oil, I’d recommend extra virgin olive or avocado oil)
4. Pour the batter onto the waffle iron and close the lid and wait for the magic to happen! (Depending on the waffle iron, it should cook in about 3-5 minutes)
