Sweet potato rolls (15 small units)

Rita, our nutrition coach at SACOSA, created this super simple recipe for tasty sweet potato rolls rich in antioxidants.

Ingredients:

  • 170g wheat flour
  • 1 teaspoon yeast
  • 500g raw sweet potato
  • 1 teaspoon olive oil
  • salt 

To-Dos:

1. First, cook the potato in water without the peel. Drain the water, let it cool and then reduce to puree. Put the potato puree in a bowl and add the remaining ingredients, mixing until a smooth paste, without beating too much.

2. Put some flour in your hands and form little breads. 

3. In a lined tray, place the little rolls apart and bake them for about 30-35 minutes at 200- 250 degrees. But always keep an eye on them!

4. Remove the rolls from the oven and let them cool.

5. Enjoy your self-made sweet potato rolls e.g. with some cheese, yogurt or fruits ;-)
