As time takes a turn into 2023, it’s refreshing to pause a bit in front of the cracking fireplace (writes?Dimitris Kossyfas). Yes, the sun may be glorious outside, if you’re lucky to be reading this around our part of the world. And it’s such a brisk run early in the morning on such a day. But as dusk sets for the first time this year, I’ll be putting on some piano jazz and kicking back with a glass of bold red wine. Travel plans come plenty and before deciding on new frontiers I’m doing some homework.
As much as we love reflecting?back on?the dishes of the Athenian dining scene and what we liked?most in 2022, it’s time to look ahead. Time to get ambitious. Time to explore new places.
How do travel destinations spring up though?
Surely some of the grand ones have already been intertwined with humanity’s past. Paris, London, New York. But the smaller and more niche ones tend to crop up every now and then out of nowhere. Is it just the sheer beauty of places? Their hospitality offerings, be it a cute guesthouse run by a family?or a tasty restaurant run by a passionate chef? Or is it just the strong will of entrepreneurs that persevere and make it all happen? I wonder. And therefore I wander.
One thing’s certain. As a fellow colleague and foodie puts it when it comes to the best tasting dishes: “the more I grow, the more I take out of a recipe; keeping it simple”. And the same applies for those places I’m looking to visit this year.?
