Sugar Bean Goulash


Sugar beans are a fantastic source of soluble fibre, so it’s the perfect additional or main protein to any meal! We have posted a recipe below for a goulash that is made from sugar beans, perfect for your next meatless Monday experiment.

You will need:

  • 225g uncooked red speckled sugar beans OR 525g canned sugar beans, drained
  • 20ml olive / canola oil
  • 2 cloves of garlic, crushed
  • 1 medium white onion, thinly sliced
  • 125g white button mushrooms
  • 4 zucchinis, grated
  • 25ml tomato puree
  • 5ml paprika
  • 2ml mustard powder
  • 2ml cayenne pepper
  • 5ml cumin seeds
  • 2 bay leaves
  • 350ml reduced sodium vegetable stock
  • Salt and pepper, to taste
  • 5ml cornflour
  • Cauliflower rice, to serve

Method:

  1. Soak, drain and cook the beans if they are uncooked.
  2. Heat the olive / canola oil in a large pan. Stir-fry the onion, mushrooms and zucchini for 3-5 minutes. Add the garlic and stir continuously to prevent it from burning. Add the cooked beans, tomato puree, spices and stock to the pan. Simmer for 20-25 minutes and season with salt and pepper.
  3. Mix the cornstarch with some cold water and add to the mix, this should produce a slightly thicker sauce.
  4. Serve with some steamed cauliflower rice.
