[Story No. 7] The Grilled Cheese Bistro Sizzles With Success

What happens when you combine two pieces of bread, slice of cheese, and a frying pan? The answer -- a winning business model.

The Grilled Cheese Bistro is a cozy downtown restaurant that launched in 2015, and has quickly become a staple for both foodies and novices alike.

Even though the concept of a grilled cheese seems rather simple, the culinary combinations that the chefs make are truly remarkable. The menu includes names like; Sam I Am, Gooey, Hangover, Dreamin' of Reuben, and Guiseppe (Melon, Prosciutto, Basil, with Local Wild Flower Honey, Balsamic, Mozzarella & Fontina).

When you walk into 345 Granby Street, you'll notice two things right away. First, that you're probably too late to the party and must wait for a table to open up. Second, that the aroma of sizzling grilled cheese makes everything okay. The cozy nature of the restaurant makes for a unique dining experience. There are only about 20 seats in the entire place so the physical setup means that you are constantly having food envy when the person next to you gets their order. It's probably one of the greatest marketing tools in existence, because every time I eat at GCB, I want to come back... the next day.

This place is SO good. You can't eat there but so much, but save up all your calories and go there. Get the truffle fries too. Must-have!
