Steven Boss: Tomato Mung Dal

Someone sent me the image above and I got a real kick out of it. If you don’t know how to boil water, honestly, it’s a simple fix. 

It’s more about paying attention, and the desire. After that, clear directions, the best ingredients you can afford, one or two knives, a few cooking utensils (wooden spoons feel great to use), a couple of pots and pans (The Always Pan is perfect if you only want one pot/pan. I use mine EVERY day), and for more flexibility, but not a necessity, a decent toaster oven (Breville has a wide variety of dependable models). You can add all types of additional “stuff” when you have the time, money, or need.

If you want to cook, you can cook. And for those of us who do cook, we can continue to get better and better. 

This week has been especially fun because every dish Rachel and I cooked was a winner. Believe me, that isn’t always the norm. Highlights—

  • asparagus risotto (perfect for spring),
  • a salad with local lettuce, spring onions, radishes, avocado, roasted cherry tomatoes and carrots, and toasted Oregon hazelnuts with
  • a dressing of olive oil, lime, mandarin, salt, pepper, Dijon mustard, and parmesan,
  • tomato mung dal (recipe below), and
  • potato/broccoli/cheddar casserole.

Whatever your reason(s) for using or wanting to use a non-dairy milk, there are a crazy number of choices on the market—soy, almond, rice, oat and more. You can make tasty versions of many of the styles at home, but lack of time causes most of us to pick up whatever is available on the grocery shelf. I enjoy Willa’s Oat M!lk. It’s organic and has only three ingredients—whole grain oats, vanilla extract, and salt. No added sugar.

I agree that we all can cook if we want to. Many use not being able to cook as an excuse.

Sounds yummy, but I will have to try it with my needed substitutes. I'm dairy free and gluten free.
