Sri Lankan-Style Fish Curry
As Sri Lanka is going through an economic crisis where 22 million people are suffering people need help and solution for the current turmoil. They need long term international support.
All spices exported from Sri Lanka are tropical aromatics, the most prevalent being?pepper, cinnamon, cloves, nutmeg, mace, and cardamom.
So let's cook by using Sri Lankan spices. Every little help ! to support in their spice export.
Ingredients
2 seabass ?, ?4 fillets cut into 8, ?deboned use any local fish of your choice.
2 teaspoon ground turmeric
1 limes
400 ml tin of ?coconut milk
?Making gravy
2 red ?onions
4 cloves of garlic
5cm piece of ginger
2 fresh green chillies
10 ripe medium tomatoes
Any cooking ?oil ( I love mustard oil)
8 fresh curry leaves,
4 cardamom pods
2 teaspoons black mustard seeds

1 teaspoon fenugreek seeds ( my mum’s best spice )
? teaspoon turmeric powder
4 teas spoon of Ceylon garam Masala ( we can use use bought in from local Asian store)
?1 teaspoon tamarind syrup

Dry roast and make ground and keep air tight container for later to use. we need just 4 teas spoon for now.
Method
Add the rice to a pan with 100ml of the coconut milk and 300ml of salted water and cook with few pod of green cardmon and pandan leaves
To make your curry, peel and finely slice the onions and garlic, peel and finely chop the ginger, then slice the chillies. Roughly chop the tomatoes, keeping them separate.
Really important steps
Heat a large pan over a medium–high heat and add a cooking oil, when it hot add first fenugreek seed fry until ?it goes ?brown add mustard seed fry until start dancing around then add cumin, curry leaves and smashed cardamom seed then onion goes. Fry onion onion until it goes to golden brown then add ginger, garlic, chillies . Cook for 5 to 10 minutes
Add chopped tomato and cook until it melt and finish with coconut milk and cook another 10 minute and add tamarind and give good stir. then add fish and keep fire in slow heat and leave all ingredients to settle together.
