Spraying Egg Wash Substitute on Baked Goods: Improved Sanitation, Cost Savings and other benefits

Why do we glaze products?

We’ve all heard the classic adage, “You eat with your eyes first”. We’re seeing this prove true more and more; glazed products are seen as fresher, higher quality and more appetizing. Pectin glazes, egg washes, and egg wash substitutes are all being used by bakers and food formulators to achieve a shiny and glazed appearance. Pectin glazes have been a staple in the food industry for emphasizing product appeal and improving product taste and texture all while prolonging freshness.

·??Availability and fluctuating prices:?Eggs are one of the most expensive?ingredients in bakeries, and there are?frequent shortages in the supply?

·??Health & Sustainability: Eggs are not?compatible with Vegan and?Vegetarian Diets?

·??Shelf Life: Weeks

Making the switch to egg wash substitute

Although the benefits of egg washes are clear, their disadvantages are becoming more and more problematic for bakers and food formulators. The recent introduction of higher quality egg wash substitutes to the market is allowing more bakers to easily transition to egg wash substitutes, which yield all the benefits of egg wash but with far less drawbacks.

Application:

Spraying is widely regarded as the best approach to applying egg wash or egg wash substitute and Bakon is here to help in the transition. With Bakon’s spraying expertise, we can provide complete target and disc spraying systems which are two of the dominant glaze spraying technologies. Both disc and target spraying technologies offer a highly efficient and sanitary approach due to their contactless application.

Bakon disc sprayers:

The disc sprayer is a clean disc spinning solution that consistently applies a fine layer of egg wash, egg wash substitute, oil, liquid flavor or other liquids. Our disc sprayers can be equipped with refrigerated or heated containers for storing a variety of glazes. Discs rotating at a speed of 3000 rotations per minute create fine drops of liquid that cover products consistently.?The individual adjustment of the discs makes it easy to regulate the output of the spraying product and ensures an even spraying pattern on your product. Because the drops of liquid are gravity driven onto the product, the disc spraying approach results in a very clean approach with no generated mist.

Bakon target sprayers:

The application of egg wash (or substitutes) is done by pulsating spray guns on a spraying bridge. The spray guns can be easily positioned across the width of the spraying bridge, which is quickly adjustable in height. Bakon target spraying systems are equipped with precision nozzles that increase throughput, minimize overspray, and reduce maintenance time. Our target spraying systems come equipped with electrically actuated air Atomizing nozzles that feature fast, intermittent operation with the smallest drop sizes and lowest flow rates. Optionally, our spray nozzles are capable of detecting drops in pressure due to clogs within a specific nozzle and can react by activating a second spray bridge to keep the line running. Our target sprayers can also be specially developed for even and airless application onto virtually any shape or size of product, with consistent result. Bakon also offers several smaller machines that can be used for testing and validating the dilution rate or even the position of the machine in the processing line.
