Grab a Spoonful of Comfort: Fall Butternut Squash Soup Recipe

Nothing is more heart-warming (and stomach-pleasing) than a rich, creamy butternut squash soup. The perfect meal during chilly months, we think you’ll fall for this easy and delicious Fall Butternut Squash Soup recipe!

Ingredients:

·???? 1 Tbsp. olive oil

·???? 1 medium yellow onion; chopped

·???? 1 large carrot; peeled & chopped

·???? 1 celery rib; chopped

·???? 3 cloves garlic; minced

·???? 3 lbs. butternut squash; peeled & chopped (about 1 medium-sized squash)

·???? 3 cups vegetable broth

·???? 1 green apple; peeled, cored & chopped

·???? ? tsp. ground cinnamon

·???? 1 sprig fresh thyme

·???? 1 sprig fresh rosemary

·???? 1 tsp. kosher salt

·???? ? tsp. black pepper

·???? Pinch of nutmeg; optional

·???? Toasted pepitas; optional

Directions:

1.???? In a large pot, heat olive oil over medium-high heat. Add onions, carrots, and celery and cook until soft, approximately 3 – 5 minutes.

2.???? Add vegetable broth, squash, apple, nutmeg, cinnamon, thyme, rosemary, salt, pepper, and nutmeg. Reduce heat to low and simmer for 20 – 30 minutes, or until the squash is softened.

3.???? Remove from heat and let cool for several minutes. Then, puree soup in the pot with an immersion blender or transfer to a blender (working in batches if needed) to puree.

4.???? Serve hot, topped with toasted pepitas and a side of crusty bread.?
