Shaping the Future of Food Systems: Spotlight on Sofia Segal and Soffy Anderson


At the University of Denver, Sofia Segal and Soffy Anderson are championing a movement toward sustainable, ethical, and community-driven food systems. Their work reflects a profound commitment to collaboration, critical thinking, and fostering meaningful change.


How Their Journeys Began

Sofia Segal developed an interest in sustainability during high school, but her passion for food systems was sparked in her first year at the University of Denver. "Understanding the impact that farming and agriculture can have on the planet led me towards a fully plant-based diet," Sofia shares. This shift fueled her desire to connect with like-minded individuals, driving her academic and personal pursuits.

Soffy Anderson discovered her passion for questioning current food systems while working with the Center for a Regenerative Future at DU. "I wanted to be a part of Plant Futures because of the opportunity it presents to create more regenerative spaces within university settings," Soffy explains. She envisions safe, collaborative spaces where students can openly critique and improve existing systems to shape a better society.


Why Plant-Centric Food Systems?

Sofia: "Plant-centric food systems excite me because they offer hope for a sustainable future. Shifting focus to plant agriculture over large-scale meat and dairy farming could transform the way we interact with the planet. The food system of my dreams involves small farms, farmers markets, and co-op-style grocery stores offering affordable, abundant, and locally sourced produce."

Soffy: "What excites me about plant-centric food systems is the opportunity to live in harmony with our environments and to foster ethical relationships within our communities."


The Plant Futures Network

As members of the Plant Futures network, Sofia and Soffy look forward to deepening their understanding of food systems while learning from peers in a dynamic, inclusive space.

Sofia: "Although I am passionate about sustainable and regenerative food systems, I am always learning, and that is what excites me most about being part of Plant Futures."

Soffy: "I am excited to engage with peers and explore the innovative ideas they bring to the table. This platform will spark important discussions and collaborative learning."

Sofia: "I love to paint, garden, and rock climb!"

Soffy: "I’ve been writing poetry since 4th grade and enjoy performing at community open mic events."
