To Serve, Or Not To Serve Is Never A Question
As the Labor Day holiday approaches, the Devault Kitchen Magician team decided to share specific dishes. The purpose is to show appreciation for those American workers who contribute every day to the strength, prosperity and well-being of our country. “The Devault team developed a series of delicious recipes and tips to express our appreciation and gratitude for some of the hardest working men and women in the country”, says Brett Black, Chief Operating Officer.
In this third installment, Service Workers are acknowledge for the contributions they make to society. Service workers such as those in food and beverage service, housing and corporate security, and property maintenance are one of the biggest categories of workers. They often work long shifts including early mornings, late nights, weekends and holidays. Although they often blend into the background, they are the people who keep our economy humming. These are workers whose jobs can’t be moved off-shore. They live in our community and touch our lives every day.

To honor these workers, our Kitchen Magician team wanted to create a signature dish that is layered in flavor and has a flash of spice.” continues Brett Black “A day off marks the occasion for a party. This dish can be enjoyed at home, on a picnic or taken to a friend’s home to be enjoyed by many. “
Baja Chicken and Beef Nachos
Prepare the taco seasoning. Combine the taco seasoning, 1/3 cup olive oil, chicken and beef in a sealable plastic bag or container. Manipulate the meat in the bag to insure that it is well coated. Allow meat to marinate in the refrigerator for a minimum of 30 minutes.
In a skillet, sauté minced garlic and chopped whites of the green onions over a low-medium heat. Do not allow the garlic to cook beyond golden brown; it can burn very quickly. As the garlic begins to brown, add the marinated meat to the pan. Brown the meat. Remove the pan from the heat.
Prepare the ingredients for layering the nachos by slicing the black olives, chop the greens of the onion and cut the avocado into cubes. Reserve a small portion of each as well as some cheese for the top layer.
Place a layer of tortilla chips on a serving platter that can be placed into an oven or microwave. Spoon some meat, salsa, black olives, green onion, avocado and jalapeno if you choose to have some heat! Top this with a layer of shredded cheese. Place another layer of tortilla chips and repeat with toppings. Continue to create layers until all of the ingredients are used. Create a crowning top layer of cheese. Place the platter into a microwave for 90 seconds – 2 minutes or in an over at 300 degrees for 5-7 minutes or until the cheese melts. Before serving, top with the reserved green onion, black olives and avocado. Finish with a squeeze of lime juice over the top.
