Sekuwa Nepalese Grilled Meat

Every country got own version of popular grill meat. Thailand is popular for Satay, Indian Pakistani are popular for Tandoori and Tikka, Iran got famous Joojeh Kebab, Turkey got Kofta or Shish similarly Nepal got own version of grilled meat known as Sekuwa .
Sekuwa Nepalese grilled meat is one of the most popular fast foods in the streets of Nepal. It is often served with puffed rice ( Moori / Bhooja ), beaten rice (Chiura), Tomato relish (Achar) with few slices of seasonal salad like cucumber, carrot red, onion and wedges of lemon are classic combination. It is one of the must-have food items in the restaurants as well.
Nepalese love to have spicy savoury ( Twakka ) bite as snacks with alcoholic drink in bar ( Bhatti ) and every one got their favourite place ( Adda ) like pub in UK.
Ingredients
1 kg Spring Lamb ( Chicken Breast / Thigh ) cut into 2.5 cm cubes
I like with fat marbled meat normally find in grain feed animal.
12 Bamboo skewers soak for 20 minutes before use)
Marinade
- 14 gm / 3 tsp Salt
- 15 ml /1 tbsp Lemon juice
- 3 gm / 1 tsp Turmeric powder
- 2 gm / 1 tsp Red Chilli powder
- 10 gm Cumin Powder ( I like crushed / cracked )
We can grind following ingredients below all in one go to make puree
- 15 gm / 2 inch /1 tbsp / Ginger puree
- 18 gm / 3 cloves / 1 tbs Garlic puree
- 15 gm Green Papaya Puree ( if meat is tough, this will help to make tender)
- 12 gm / 2 small fresh green chillies, finely chopped
- 60 ml Mustard Oil
Method
- Fold all ingredients to marinate with meat and thread on to skewer the meat one by one do make over crowed but just enough to cover skewer.
- Preheat a oven charcoal barbecue or char grill to medium-high heat.
- Grill for 5 minutes turning frequently until the lamb is brown on all sides and cooked through.
- If you using electric oven then cook 180 °C for 12 to 15 minute depend on your oven.
- We can sear in griddle too.
Garnishes
Season to taste and drizzle with lemon juice. Serve immediately with beaten rice, Tomato Achar, Salad on side.
