Scaling Up and Troubleshooting: How IT Methodology Saved Our Cinnamon Rolls
Scaling our beloved cinnamon roll recipe from one batch to twenty at Family’s Favorite Foods proved trickier than expected. The first attempts yielded smaller and dense rolls, much like IT systems failing under increased load. So, I applied CompTIA’s A+ troubleshooting methodology, and here's how it played out:
Step 1: Identify the Problem
The scaled-up batches resulted in rolls that were either undersized or not fluffy enough.
Step 2: Establish a Theory of Probable Cause
The standard mixing, kneading, and proofing processes weren’t sufficient for the larger volume, leading to inadequate yeast activation and poor gluten structure.
Step 3: Test the Theory to Determine the Cause
I divided the dough into smaller portions and adjusted the mixing and proofing times. This experiment confirmed that the original process was unsuitable for the larger batch size.

I divided the dough among four mixers, increased the kneading time from ten minutes to fifteen, and proofed it for two hours on the first proof and eighteen hours on the second (normally this stage would be twenty-four hours. The dough was closely monitored to prevent over-kneading.

The result was perfectly sized, fluffy cinnamon rolls. To ensure consistent quality, I documented the new process and adjusted the recipe for future large orders on our recipe scaling spreadsheets.

Scaling a recipe, much like scaling a system, requires a methodical approach. I learned that precise adjustments in every stage of the process are essential for success.
