Savour the Future: How We're Raising the Bar with Sustainable Event Dining

We love our food here at Marina Bay Sands. Not only is it a great conversation-starter, but it also forms an essential part of the delegate experience.?In some instances, the dining experience is a medium for event?organisers?to tell stories that align with their corporate values – especially in the area of sustainability.?Take a look at three innovative methods our?integrated resort has incorporated into our daily practice to ensure that?every event here is a green and sustainable one.?

?? From farm to table right in the heart of our city?

Herbs and spices bring new dimensions of?flavour?to our?favourite?dishes. Having these key ingredients within easy reach is crucial to ensure that we can always serve up delightful meals to our clients. By transforming an empty walkway at our MICE building into a working edible garden, we have not only enhanced our food resiliency but also reduced our carbon footprint from imported produce. Plus, the garden provides a lush, tranquil space for our delegates to rejuvenate and connect with nature.?

?? A second lease of life for oil?

Oil is a necessity in every kitchen. While it's easier to strain and reuse oil in a home kitchen, this practice is not as feasible on a larger scale. At least 1,000 kilograms of oil is used in a span of two to three days here in our commercial kitchens. As such, we focus more on recycling the oil once it has served its purpose. We work with a licensed oil collector to recycle and refine the used oil, transforming it into renewable fuel to power vehicles, airplanes, lights and more.?

It is always a pleasure to work with like-minded clients who share the same vision of a greener future.?When Schneider Electric held their Global Innovation Summit here at Sands Expo and Convention Centre in 2018, we?worked hand in hand?to?raise the bar in sustainable food storytelling and debuted specially crafted?‘Earth-friendly’ menus. The dishes featured?sustainably sourced ingredients from Organic, Fair Trade or Rainforest Alliance Certified farms.?Over?10,400 earth-friendly meals?were served over the two-day event, which included an?Innovation Summit Dinner?for?1,000 delegates?on the first day.?
