Savory Butternut Squash and Caramelized Onion Tart

Ingredients:

For the Crust:

1 1/4 cups all-purpose flour

1/2 tsp salt

1/2 cup unsalted butter, chilled and diced

1/4 cup ice water

For the Filling:

2 tbsp olive oil

2 cups butternut squash, peeled and diced

2 large onions, thinly sliced

1 tsp sugar

1 tsp balsamic vinegar

1/2 tsp fresh thyme leaves, plus more for garnishing

1 cup grated Gruyère cheese

1/4 cup sour cream

1 egg, beaten

Salt and pepper to taste

Instructions:

Prepare the Dough:

In a mixing bowl, combine flour and salt. Add chilled butter, using a fork or pastry blender, until the mixture resembles coarse crumbs.

Gradually add ice water, stirring until the mixture forms a ball. Wrap in plastic wrap and refrigerate for at least 30 minutes.

Cook the Squash:

In a skillet, heat 1 tbsp olive oil over medium heat. Add the diced butternut squash and season with salt and pepper. Cook until tender and lightly browned, about 8-10 minutes. Remove from skillet and set aside.

Caramelize the Onions:

In the same skillet, heat the remaining olive oil. Add the onions, sugar, and a pinch of salt. Cook on low heat, stirring occasionally, until the onions are golden brown and caramelized, about 20 minutes. Stir in balsamic vinegar and thyme, cooking for an additional 2 minutes. Remove from heat.

Preheat the oven to 375°F (190°C).

Assemble the Tart:

On a floured surface, roll out the dough to fit a 9-inch tart pan with a removable bottom. Press the dough into the pan and trim the edges.

Spread the caramelized onions evenly over the dough, followed by the cooked squash. Sprinkle the grated Gruyère cheese on top.

In a small bowl, whisk together the sour cream and beaten egg. Season with a little salt and pepper, then pour this mixture over the cheese.

Bake in the preheated oven for 25-30 minutes, or until the filling is set and the crust is golden brown.

Serve:

Let the tart cool slightly before removing from the pan. Garnish with fresh thyme leaves, slice, and serve warm.
