SATURDAY BRUNCH! MENU 2
1. Eggs Florentine
Ingredients:
- 4 English muffins, split and toasted
- 2 cups fresh spinach leaves
- 8 large eggs
- Hollandaise sauce (store-bought or homemade)
- Salt and pepper
- Chopped chives or parsley (for garnish)
Instructions:
1. Prepare the Hollandaise sauce according to your favorite recipe or use a high-quality store-bought version.
2. While the sauce is warming, sauté the spinach in a pan over medium heat until wilted. Season with salt and pepper.
3. Poach the eggs: Bring a large pot of water to a gentle simmer. Crack each egg into a small bowl. Carefully slide the eggs into the simmering water and cook for about 3-4 minutes until the whites are set but the yolks are still runny.
4. Assemble the Eggs Florentine: Place a layer of sautéed spinach on each toasted muffin half. Top with a poached egg. Spoon Hollandaise sauce generously over the eggs. Season with salt and pepper. Garnish with chopped chives or parsley.
5. Serve immediately while warm.
Chef's Notes:
- If you prefer, you can use cooked sliced mushrooms along with or instead of spinach.
- Poaching eggs can be tricky; using fresh eggs and swirling the water gently before adding them can help keep the whites together.
2. Avocado Toast with Poached Eggs
Ingredients:
- 4 slices of artisan bread (sourdough or whole grain)
- 2 ripe avocados
- Juice of 1 lemon
- Salt and pepper
- 4 large eggs
- Red pepper flakes (optional)
- Cherry tomatoes, sliced (for garnish)
- Fresh cilantro or microgreens (for garnish)
Instructions:
1. Mash the avocados in a bowl with lemon juice, salt, and pepper to taste.
2. Toast the bread slices until golden and crispy.
3. While the bread is toasting, poach the eggs (follow the same method as for Eggs Benedict).
4. Spread a generous layer of mashed avocado onto each toast slice.
5. Carefully place a poached egg on top of the avocado.
6. Season with additional salt, pepper, and red pepper flakes if desired.
7. Garnish with sliced cherry tomatoes and fresh cilantro or microgreens.
8. Serve immediately.
Chef's Notes:
- Adjust the avocado seasoning to your preference. Some like it with a kick of spice from red pepper flakes or a drizzle of hot sauce.
- For variation, add crumbled feta cheese or a dash of balsamic glaze on top.
3. Classic Seasonal Fruit Salad
Ingredients:
- 2 cups of fresh strawberries, hulled and halved
领英推荐

- 1 cup fresh raspberries
- 2 bananas, sliced
- 1 orange, peeled and segmented
- 1 tablespoon honey (optional)
- Fresh mint leaves (for garnish)
Instructions:
1. In a large bowl, combine all the prepared fruits.
2. Drizzle with honey (if using) and gently toss to combine.
3. Garnish with fresh mint leaves.
4. Chill in the refrigerator until ready to serve.
Chef's Notes:
- Feel free to use any combination of your favorite seasonal fruits.
- The honey adds a touch of sweetness, but you can omit it if your fruits are naturally sweet.
4. Sparkling Citrus Mocktail
Ingredients:
- Sparkling water or club soda
- Freshly squeezed orange juice
- Freshly squeezed grapefruit juice
- Lemon or lime slices (for garnish)
- Ice cubes
Instructions:
1. Fill glasses with ice cubes.
2. Pour equal parts orange juice and grapefruit juice into each glass.
3. Top with sparkling water or club soda.
4. Garnish with lemon or lime slices.
5. Stir gently to combine.
6. Serve immediately.
Chef's Notes:
- Adjust the juice proportions based on your preference for sweetness and tartness.
- You can also add a splash of cranberry juice for a deeper color and flavor.
5. Chef-Cut Hickory Smoked Bacon
Ingredients:
- Chef-cut hickory smoked bacon slices
Instructions:
1. Preparation: Start by ensuring your bacon slices are at room temperature. This helps the bacon cook more evenly.
2. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil for easy cleanup.
3. Arrange the Bacon: Lay out the Chef-cut bacon slices in a single layer on the prepared baking sheet. Make sure the slices are not overlapping.
4. Bake the Bacon: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the bacon reaches your desired level of crispiness. Keep an eye on it towards the end of cooking to prevent burning.
5. Flip if Needed: Depending on your oven and the thickness of the bacon slices, you may want to flip the bacon halfway through cooking to ensure both sides cook evenly.
6. Drain and Serve: Once the bacon is cooked to your liking and crispy, remove the baking sheet from the oven. Use tongs to transfer the bacon slices to a plate lined with paper towels to drain off excess grease.
7. Serve: Serve the chef-cut hickory smoked bacon slices immediately while hot and crispy. Enjoy them as a side dish for breakfast or brunch, or use them as a delicious addition to sandwiches, salads, or other recipes.
Chef's Tips:
- For extra flavor, you can sprinkle a bit of black pepper or brown sugar on the bacon slices before baking.
- Be mindful of the cooking time as bacon can quickly go from crispy to burnt. Adjust the baking time based on your preferred level of crispiness.
- Use high-quality chef-cut bacon for the best flavor and texture.
