Food trends: Kimchi is the oldest, but youngest kid on the block
Fermentation is one of the oldest forms of food preparation. However, I feel like it has a poor and under appreciated reputation and I can only pin that down to a lack of awareness and education.?

You can ferment food at home very easily, but if your not familiar with these types of flavours perhaps start with buying some kimchi or kombucha from a supermarket.

Recently I came across a company this is using the leaves from cauliflower to create kimchi. Not only is that healthy, but its incredibly sustainable as normally in restaurants these would just get instantly discarded into the bin.

Kale was once the king of the trendy foods, but sourdough bread, kimchi and kombucha have now stolen its crown.?
