At Red Shell we use ONLY MSC Certified, line caught Big Eye tuna, super frozen to capture the freshness and true color of the fish.

Other companies use CO (carbon monoxide) preserved Tuna which is why their tuna is bright and often watermelon pink. We refuse to serve tuna processed in that way.
Ours is a deep red color which is the true color of tuna when caught. We then super freeze fresh tuna within two hours of catch before the quality starts to deteriorate. The result is a fresher than fresh Tuna and an opportunity to serve the best product to your customers!
To take retail sushi back to its niche roots demands that we use ONLY the BEST seafood and ingredients including:
MSC Certified Line Caught Big Eye Tuna, MSC Certified Kanikama, MSC Certified Bluefin Tuna, MSC Skipjack Tuna, BAP King Salmon, Norwegian Salmon, Natural Wasabi (never from a paste), Natural Ginger and Temaki Premium Short Grain Rice.
